remembering solomillo

the first morning after i arrived in Valencia, i slept in after a kind night of re-engaging with Spanish tapas culture, and woke up shortly before noon. i had to be somewhere at 2 so i quickly found a place to eat and it turned out to be perfect. daily menu (and i love the idea of restaurants only having one or two things on their “menu del dia”, cause you know that means they’ll do it well) was gazpacho andalucia and solomillo iberico (free-range organic pork tenderloin) with light parmesean sauce. the gazpacho was near perfection with some oil blended and some still out of solution, and the tenderloin was butterflied and cooked perfectly. the parmesean sauce was like a light white wine sauce but deep enough to have a fine farmers cheese structure to build on. i had to wave off dessert and wine, which my waiter protested vigorously, but let me have a cafe solo (espresso) and dash to my meeting.
